From Whey Protein Pioneer to the Third Category of Protein: Why I Chose NiHTEK®

After nearly four decades across dairy proteins, food science, sports nutrition and international ingredient development, Benoit Turpin explains why NiHPRO® stood apart and why he chose to help take NiHTEK® innovation across the Americas and into India.

Protein has been part of my life since before it became my profession.

 

I was born in Lorraine and grew up on a dairy farm in Normandy, France. Long before I understood the language of protein fractions, amino acid profiles, hydrolysis or clinical nutrition, I understood that food begins with agriculture, that quality starts at the source, and that what we create ultimately has to work for real people.

 

That foundation stayed with me. I later earned a master’s degree in food science from ENSAIA in Nancy, one of France’s respected Grandes Écoles, and moved to the United States in 1988 to begin my professional career with Lactalis. My early work crossed operations, research and development, quality assurance and specialty cheesemaking before I moved into technical sales and dairy protein ingredients.

Over the years, I have worked across protein ingredients, sports nutrition, functional foods, specialised nutrition, product development and international business strategy. I was fortunate to be part of the early development of markets for French whey protein ingredients internationally, at a time when whey protein isolate was still establishing the global position it holds today.

Later, I held commercial and leadership roles with companies including Kantner Ingredients, Protient and Milk Specialties Global, where I served as Vice President of Sales and Marketing. I also joined Plasma Nutrition as Vice President of Business Development and eventually created Valecor to work more directly with trusted ingredient partners, manufacturers and customers around the world.

Across these different chapters, one principle remained consistent: an ingredient cannot succeed on science, sensory performance or commercial strategy alone. It has to bring all three together.

After nearly four decades in the protein and food ingredient industry, I thought I had seen almost every meaningful innovation the category had to offer.

Then I met NiHTEK®.

What Nearly Four Decades in Protein Teaches You

Experience makes you curious, but it also makes you careful.

 

When you have evaluated thousands of ingredients, technologies and product concepts, you learn to separate a promising idea from a commercially meaningful innovation. Trade shows are full of new ingredients and strong claims. Some are genuinely useful. Some solve only one narrow formulation problem. Others are familiar products presented with new language.

 

True innovation is much rarer.

 

For me, a new protein technology has to answer several questions:

 

  • Is the science credible?
  • Does the product deliver meaningful nutritional value?
  • Does it perform in real formulations?
  • Will consumers enjoy the taste and texture?
  • Can brands communicate the difference clearly?
  • Is there a real commercial opportunity beyond novelty?
  • Can the company behind it protect quality as demand grows?

These are not theoretical questions. They are the questions asked by ingredient buyers, formulators, contract manufacturers, nutrition brands and consumers. If an innovation cannot withstand them, it will struggle to move beyond an interesting sample.

 

My background also means I do not compare a new protein against the weakest product in the market. I compare it against whey protein, because whey has earned its position through excellent amino acid quality, decades of research, broad formulation knowledge and strong consumer trust.

 

Any new protein category has to be judged against that standard.

Meeting the NiHTEK® Team at Vitafoods Europe

I first met the NiHTEK® team at Vitafoods Europe in 2024. What initially caught my attention was Hydrolysed NiHPRO® Protein Isolate.

 

The proposition was ambitious: a non-dairy protein platform designed to deliver the protein quality, smooth sensory experience and formulation potential that brands and consumers traditionally associate with premium dairy proteins—while also addressing lactose, allergen, sugar and digestive-comfort needs.

 

I was intrigued, but naturally sceptical.

 

That was not because I dismissed non-dairy protein. It was because I knew how difficult the challenge was. Many non-dairy proteins have historically required compromises in taste, mouthfeel, solubility, amino acid balance or consumer experience. Hydrolysis can improve some aspects of functionality and digestion, but if it is not carefully controlled, it can also create bitterness and other sensory problems.

 

NiHTEK® was not claiming to have found a simple workaround. The team had spent more than six years developing a transformed protein system using high precision engineering, controlled enzymatic processing, amino acid optimisation and a wet co-processing approach designed to create a more unified protein matrix.

 

The concept was technically interesting. But after so many years in this industry, I needed more than an interesting explanation.

 

I needed to review the science, understand the process and experience the product.

The Moment Curiosity Became Belief

As I spent more time with the NiHTEK® team, my expectations were not only met; they were exceeded.

 

The sensory experience was the first immediate proof point. NiHPRO® did not present like a conventional commodity non-dairy protein. It was smoother, cleaner and more neutral than I expected, with a mouthfeel that opened far more possibilities for sports nutrition, active nutrition, healthy aging and specialised nutrition products.

 

The nutritional profile gave the sensory performance real substance. The NiHPRO® platform has achieved a DIAAS of 1.16, with NiHTEK’s published comparison values of approximately 1.09 for whey protein isolate and 0.97 for whey protein concentrate 80. Its leucine content is comparable to whey proteins, while it provides up to four times more L-arginine than dairy proteins.

 

NiHPRO®Core also brings independently certified digestive-comfort credibility through FODMAP Friendly certification. Across the platform, NiHPRO® supports lactose-free, sugar-free, non-dairy and major-allergen-free product strategies.

 

No single number convinced me. It was the way the pieces worked together:

That combination is rare.

 

This was not simply another alternative protein trying to imitate whey through marketing. It represented a different approach to building protein from the beginning.

 

That was the moment I knew I wanted to become part of NiHTEK®.

Why NiHPRO® Represents a Third Category of Protein

I have spent much of my career in dairy protein, and I continue to have enormous respect for whey. NiHPRO® does not need to attack whey to justify its place in the market.

 

The more important point is that the traditional “dairy versus plant” comparison no longer describes everything modern protein science can create.

 

NiHPRO® begins with carefully selected non-animal protein sources, but what matters most is what those proteins become. Through NiHTEK® technologies, including Advanced Precision Hydrolysis™ (APH™) and Molecular Protein Infusion™ (MPi™), the proteins are processed, hydrolysed, amino-acid optimised and wet co-processed into a more unified nutritional and functional system.

The first category is dairy. The second is conventional non-dairy or plant protein. The third is an engineered protein system designed to bring together the strongest attributes consumers and brands are looking for across both sides of the traditional divide.

 

For formulators, that can mean more freedom to build better-tasting and more inclusive products. For brands, it creates a credible innovation story backed by measurable nutrition and functionality. For consumers, it can mean a protein they are more comfortable using consistently.

 

To me, this is where the category is heading. The future will not be won by forcing every consumer to choose a side. It will be shaped by better-designed proteins that solve more needs at the same time.

Why I Chose NiHTEK®, Not Just NiHPRO®

An exceptional ingredient matters, but the people and philosophy behind it matter just as much.

 

What drew me to NiHTEK® was the company’s willingness to take on difficult problems that established ingredient categories had learned to accept. The team was not interested in purchasing a standard protein, changing the packaging and calling it innovation. NiHTEK® was prepared to spend years developing new processes, testing the result, improving the sensory experience and building third-party scientific validation.

That philosophy is easy to say and difficult to live. It requires patience, technical depth and the willingness to continue when the first version is not yet good enough.

 

I also saw a multidisciplinary global team. My role is to help build those bridges.

Turning Protein Science Into Commercial Opportunity

Today, I serve as Global Business Development Director for NiHTEK®, with responsibility for market development across North and South America, while also leading the company’s development in India.

 

These are not identical markets, and they should not be treated as though they are.

 

North America is one of the world’s most sophisticated sports nutrition and functional ingredient markets. Customers understand protein, but they also receive a constant flow of new concepts. Earning attention requires technical credibility, dependable supply, formulation support and a clear answer to a simple question: why should a brand change?

 

Across Latin America, the opportunity is significant, but every market has its own commercial structure, regulatory environment, consumer preferences and route to market. Relationships, language, local knowledge and trusted distribution become essential.

 

India represents another major long-term opportunity. It is a large, fast-evolving nutrition market with its own price realities, product formats and consumer needs. Building it properly requires discipline, education and the right partners—not a rushed entry.

 

My experience allows me to contribute beyond traditional sales. I can work with customers from the first technical conversation through formulation, positioning, market strategy and commercialisation. I can also challenge our own thinking by asking the difficult questions that experienced buyers will ask before we enter the room.

 

Business development in an innovation company is not only about selling what already exists. It is about listening closely enough to help shape what should exist next.

What My Story Adds to NiHTEK®

NiHTEK® was created by people who came to protein innovation from different directions.

 

Drew Campbell’s journey grew from decades in sports nutrition, entrepreneurship and his personal experience with gut health and autoimmunity. Dr. Seiji Aoyagi brought a lifetime across amino acid science, biotechnology, clinical nutrition, research and development, and global nutrition leadership. My own path began in Normandy dairy, developed through food science and whey proteins, and expanded into international ingredient strategy and commercialisation.

 

These stories are different, but they converge on the same belief: protein can be better designed for the way people live now.

 

My contribution is grounded in perspective. I know what has made whey successful. I know what ingredient buyers and formulators expect. I know how difficult it is to turn technical potential into repeat orders, durable partnerships and products that consumers choose again.

 

That experience gives me confidence in NiHPRO®, but it also gives me a responsibility to remain demanding.

 

Belief in innovation should never mean lowering the standard of proof. It should mean raising it.

Looking Ahead: Protein For EveryBODY™

The global protein market is changing quickly.

 

Consumers want more protein, but they also want better taste, easier digestion, less sugar, no lactose, broader allergen suitability and products that fit different stages of life. Brands are looking for stronger differentiation while managing cost, supply risk and increasingly complex formulation requirements.

 

At the same time, the boundaries between sports nutrition, active nutrition, healthy aging, weight management and specialised nutrition are becoming less rigid. Protein is no longer only for athletes or bodybuilders. It is becoming a daily health and performance tool for a much broader population.
